This time perfect seasoning and added a light sear.

~15oz Strip steak (costco generic corn-fed), trimmed of fat. Two good pinches of salt per side, couple grinds pepper, ~1/4 tablespoon butter. Sealed in a zip-loc and immersed in a ~141F bath for ~50 mins. Rested 5 mins then slightly seared in a very hot cast iron pan.

This should be some sort of testimonial for quality cookware. See, the pan on the right is crap. They've both been on the burner for the same amount of time, yet the steak on the right is "blackened". Which pan would you choose? Actually, just pick the grill (which we haven't got yet).
